Tasty, exotic and nutritious. This is certainly my new favourite soup!
Ingredients:
- 400g Zucchini
- 1 onion sliced
- 3 gloves garlic
- 1 teaspoon chilli flakes
- Thyme
- 10 prawns ( 3 goes into the pot, grill or fry the rest for the side)
- 500ml bone broth or chicken stock
- 1 tablespoon olive oil
- 1 teaspoon Himalayan rock salt
- ¼ cup basmati rice
- Spring onions
- Labneh and poppy seeds
Method:
Braise the onion in the oil and add chilli flakes and garlic. Add the zucchini, thyme and prawns. Cook for about 10 minutes, then add the bone broth and ¼ cup of basmati rice. Boil till the rice is cooked. Blend together. Put the mixture back on to heat and add salt and spring onions.
Serve with fried prawns. Garnish with labneh and poppy seeds and ENJOY!
