Chicken is a staple in my home andĀ this is one of the recipes I use regularly. You can serve this with rice, pasta or just the vegetables to keep it low carb. I marinate a few batches and keep them in the freezer.
Ingredients for marinade:
- 1 tablespoon olive oil
- 1 tsp cayenne pepper
- 1 tsp freshly ground garlic
- 1 tsp salt
- 1/2 tsp crushed red chillies
- 1 tablespoon apple cider vinegar
- 1 tablespoon chopped parsley
- 6 pieces chicken (thighs/wings/drumsticks)
Ingredients for veg topping:
- 1 tablespoon olive oil
- 1 small red onion
- Ā½ teaspoon herbal salt
- 1 tsp freshly ground garlic
- Ā½ cup mushrooms sliced
- 1 cup bone broth
- 1 cup broccoli sliced
Method:
Marinate chicken and then bake or air fry on 180c for 30 minutes, make sure you turn it over after 15 minutes.
Fry onions in oil, then add mushrooms and spices, fry for 5 minutes, then add bone broth and simmer for 5 minutes, add broccoli and further simmer for 5 minutes. Serve chicken topped with veg, you can also serve this with rice or pasta. I usually make a pasta for those who want carbs, and I can enjoy it without.
