Ingredients
* ��2 Tablespoons Olive Oil Extra-Virgin
* ��300 g Chicken Breasts Boneless And Skinless
* ��2 Cups Bone Broth
* ��100 g Mushrooms Sliced
* ��1 Cup Whole Milk
* ��2 Garlic Cloves Finely Chopped
* ��200 g Fettuccine
* ��½ Cup Parmesan Finely Grated
* ��½ Cup Fat-Free Cottage Cheese
* ��¼ Cup Fresh Parsley Chopped
* ��Salt To Taste
* ��Freshly Ground Black Pepper To Taste
Instructions
1. ��In a large skillet over medium-high heat, heat the oil.
2. ��Add in the mushrooms and sauté for 5 minutes then add in the chicken with salt and pepper.
3. ��Allow the chicken to cook until golden brown on each side and cooked through. Approximately 8 minutes per side.
4. ��Transfer the chicken to a cutting board and let it rest for 10 minutes before slicing.
5. ��In the same skillet, over medium heat, combine the broth, milk and garlic. Season with salt and pepper. Bring to a simmer.
6. ��Add in the fettuccine and cook whilst tossing occasionally, until barely al dente. About 10 minutes.
7. ��Stir in the Parmesan and cottage cheese. Bring to a simmer while stirring until the sauce thickens and the pasta is al dente. This should take 2-3 minutes.
8. ��Remove from the heat, add in the chicken and give it a mix.
To Serve:
1. Place the pasta into a pasta bowl and garnish with chopped parsley. Enjoy!
