Crispy Cheese Greek Salad with Chicken Fillet Ingr

Crispy Cheese Greek Salad with Chicken Fillet
Ingredients:
- 2 boneless chicken fillets
- 1 tsp salt (for soaking chicken)
- 30g Lattericious mozzarella cheese
- 1 tbsp corn flour
- 1 tsp dried thyme
- 1 tbsp butter
- 1 tsp barbecue spice
- 1 cucumber, sliced
- 2 tomatoes, diced
- A handful of black olives
- Onions
- Fresh lettuce or mixed greens
- Lemon wedges (for serving)

Instructions:

1. **Soak the Chicken**:
Start by soaking the chicken fillets in a little bit of salt water for about 15-20 minutes. This helps tenderize the chicken.

2. **Prepare the Cheese**:
While the chicken soaks, prepare your cheese. If using mozzarella or feta, coat it lightly with corn flour and sprinkle with thyme.

3. **Cook the Chicken**:
In a pan, heat the butter over medium heat. Add the barbecue spice to the butter, then add the soaked chicken fillets. Cook until golden brown and fully cooked, about 6-7 minutes per side.

4. **Crisp the Cheese**:
Once the chicken is done, set it aside and use the same pan to fry the cheese. Fry until it becomes crispy and golden, around 2-3 minutes per side.

5. **Assemble the Salad**:
On a plate, assemble your salad using lettuce, cucumbers, tomatoes, and olives.

6. **Serve**:
Serve with a good slice of lemon on the side.
